Maxán was born from a dream in 2019, inspired by a maxán leaf and a desire to reinvent Mesoamerican flavours.
Founded after the closure of another business due to the pandemic, Maxán became a project that blends culinary creativity with cultural heritage, focusing on sustainability and pride in regional traditions.
Initially conceived as a ceviche and seafood spot, the restaurant evolved into a broader concept that explores the connections between Mesoamerican cultures and Flavors.
Maxán’s vision has always been to serve as a bridge between ancestral traditions and modern expectations, innovating without losing the essence of local ingredients. Maxán seeks to delight and educate its guests, showcasing cultural richness in every bite. Throughout its journey, Maxán has overcome significant challenges, including launching in the midst of a pandemic and
conveying its authentic identity. It now stands as a casual yet sophisticated place that integrates art, tradition, and sustainability, refining its offering to ensure meaningful and immersive experiences.

By interweaving diverse delicious flavors, we begin a new tradition, and the fusion represents a new chapter for our grandmothers’ recipe book.
