Quiltro, here in Antigua, has made quite an impression since opening its doors in 2017. Renowned for its Tasting Menus, Quiltro has become a must go restaurant for those seeking a gastronomic experience. Chef Rodrigo Salvo from Chile studied in the Basque Culinary Centre in San Sebastian Spain and has learnt his trade in some of the most famous restaurants in the world including the 2 Star Michelin Mugaritz in Spain, Noma in Denmark, and Dom in Brazil. After visiting Guatemala, he fell in love with Antigua and decided to open his own restaurant.
Quiltro means mixture in the Mapudungun indigenous language of Chile. So, at Quiltro, each of the dishes mixes different ingredients, flavours, techniques and knowledge to provide a unique culinary experience. Offering eight, ten and even twelve plate tasting menus, you can expect a pretty amazing evening, especially as the menus are pared with wine or cocktails. Expect imaginative dishes such as shrimp, roasted pineapple, black corn and chorizo mayonnaise. Chaya toast and sea bass. Pork Chichharrón. Güisquil tart, champurrada and lemon. As you can see, each of the dishes are inspired by Guatemala’s iconic ingredients and flavours. Consider entrées such as grilled vegetables, capa cheese and talnete honey. Mains including grilled beef, chancol, cheese boxbol and pepita sauce. And desserts like, beer ice cream, toffee, meringue, black salt and clover.
Unlike many “tasting menu restaurants”, Quiltro has an informal vibe, to which the decor designed by artisans from around Guatemala adds to your dining experience. Passionate about Guatemalan ingredients, you will find Rodrigo a perfect host.
