Culinary Adventures at La Fonda de la Calle Real
We can all agree that Guatemala has some of the most delicious food in Central America. It’s the result of the Maya culture merging with Spanish traditions (and ingredients that came all the way from Morocco). The local cuisine is flavoursome and complex, with hints of history and tradition in it.
As a tourist spot, La Antigua is a great starting point for a culinary adventure and La Fonda de la Calle Real is just the place where you’ll find authentic, heart-warming, delicious food.
Pepián
A must-have dish at La Fonda is the Pepián. Even though there isn’t a national dish, this one of the strongest contenders. Historians say this spicy stew originated among the Maya-Kaqchikel in the western region of the coutry and that it was served at major religious and political ceremonies and rituals to impress authorities. Funny enough, people in Guatemala still do the same!
Made with chicken, beef or pork (even all of them combined) and a mix of spices, it seems all the variations of the dish are served with the same vegetables in the brew, corn, carrots, potatoes and squash. It is usually served with corn tamales and rice, so we advise some fresh lemonade to go with it.
Caldo Real
If you’re looking for La Fonda’s signature dish, then we would definitely recommend you try their “Caldo Real”. A tasty chicken broth served with a tray of spices like oregano, chile powder, coriander, onion and some lemon slices. It is served in a large bowl and, of course, rice.
If you’re in town and want to taste some of the best food along Central America, La Fonda de la Calle Real is the best place to start!
Fiambre
If you’re visiting Antigua during the time of the Day of the Dead at the beginning of November, then do try their version of Fiambre.
