Picado de rábano (radish salad) is easily prepared and combined with all sorts of food in Guatemala – that includes, of course, eating it with a corn tortilla. It’s fresh to the palate and easy to prepare. Here’s how.
What you need:
As many radishes as you want. In Guatemala they are sold by the manojo (around five or six radishes).
Mint leaves (known as hierbabuena)
An onion
Two tomatoes
The juice of 4 lemons
Salt to taste
Procedure:
Remove the ends and slice the radishes.
Chop the mint leaves as fine as possible.
Chop the onion and the tomatoes.
Mix all and add salt and lemon.
Serve!
